Thyme Mashed Sweet Potatoes

 

Ingredients:

3 medium to large sweet potatoes, cut into chunks with skin

1 1/2 tbs chopped fresh thyme

2/3 cups Greek-style yogurt

1 tbsp extra virgin olive oil

 

Instructions:

Layer the sweet potato chunks on a baking dish and drizzle with the olive oil. Stir around with oil until evenly coated. Roast in a 400 degree F oven until outer portions turn golden brown (about 20 minutes). Remove from oven and place in a mixing bowl and mash the sweet potatoes to a creamy texture. Stir in the yogurt and thyme and blend thoroughly. Serve warm.

Serves 4-6
